Mutton Kulambu
Mutton Kulambu is a delicious South Indian curry made with tender pieces of mutton (goat meat) cooked in a rich, spicy gravy. It’s often enjoyed with rice. The slow-cooking process helps the mutton absorb all the aromatic spices, making it flavorful. The key to its deep flavor lies in the blend of spices, which often includes cumin, coriander, black pepper, and sometimes turmeric and red chili powder. Some recipes also use coconut, either grated or as a paste, to add a creamy texture and extra richness.

Mutton Kulambu
Equipment
- 1 Pressure Cooker
- 1 Spatula
Ingredients
- Mutton – 750g cut into pieces
- Oil – 4 tbsp
- Onions – 2 finely chopped
- Tomatoes – 3 finely chopped
- Ginger/Garlic Paste – 1 cup
- Green chilies – 4, slit
- Turmeric Powder – 1/4 tsp
- Chili Powder – 1½ tsp
- Coriander Powder – 1 tsp
- Garam Masala – 1 tsp or Raw masala spices
- Mutton Masala – 1 tbsp
- Lemon juice – 1 tsp
- Salt to taste
- Fresh coriander leaves for garnish
- For the spice paste:
- 1 tbsp fennel seeds
- 1/4 tsp cumin seeds
- Cinnamon, cardamom, Clove, Kadal paasi, Annasi poo (star anise) – 1 no each
- Coconut cubes – ½ cup or 10 -12 no’s
- Roasted Bengal gram – 1 tbsp
Instructions
- Prepare the Spice Paste:
- Add all the spices into mixer and then grind into a fine paste.
- Keep it aside.
- Place the cooker.
- Add 4 tbsp of oil and heat oil in a large pan or pressure cooker.
- Add the finely chopped onions and green chilies, sauté until golden brown.
- Now add finely chopped tomatoes to the cooker and sauté well.
- Add salt to it so that the tomatoes are smashed well.
- Add 1 cup of ginger/garlic paste
- sauté for another 2 minutes until raw smell goes.
- Add ¼ tsp turmeric powder and sauté well.
- Next add ½ tsp chilli powder and mix well for few minutes.
- Add 1 tsp coriander powder and mix well.
- Add the mutton pieces and sauté for 10minutes.
- Add salt as required to the mutton.
- Pour in enough water to cover the mutton.
- Allow it to boil for few minutes.
- If using a pressure cooker, cook for about 20 minutes(6-8 whistles). If using a regular pan, cover and cook until the mutton is tender (approximately 1-1.5 hours), stirring occasionally.
- Once it is cooked well our mutton soup is ready to prepare kulambu.
- Add 400 ml of water to mutton.
- Add the prepared spice paste to the content.
- Now add chilli powder to the kulambu and mix well.
- Mix everything together.
- Add mutton masala onto it and stir well.
- Boil for few minutes.
- Let it simmer for another 5-10 minutes until the gravy thickens.
- Later add 1 tsp lemon juice to the kulambu.
- Garnish with fresh coriander leaves.
- Serve hot with rice, roti, idly or dosa.
