Rava Kesari
“Rava Kesari” definitely one of the popular mouthwatering dessert in south India which is mostly prepared during festival feast.
My mom always used to make this dessert, if we feel like having a good one. It has several other names like Sooji kesari, Sooji halwa, Semolina kesari, Sheera.
Rava kesari topped with cashews and raisins are great combinations. Other nuts can also be added to have tasty and crunchy effect on it.
To avoid lumpy Sooji, it is mandatory to add roasted rava only to boiling water
The amount of Ghee you add gives great taste to the kesari

Rava Kesari
Equipment
- 1 Pan
- 1 Spatula
- 1 Pan (For tempering)
Ingredients
- Ghee to fry cashews raisin and rava – 1 tbsp
- Cashews/Kaju/Halves – 10-15
- Raisins/Dry grapes/Kishmish – 6-10
- Rava/Sooji/ Semolina – ½ cup
- Sugar differs according to our choice – ¾ cup
- Water – 2 cup
- Kesari color – ¼ tsp
- Cardamom powder/ Elachi powder ¼ tsp – ¼ tsp
- Salt – 1 pinch
- Ghee topping at end – ¼ cup
Instructions
- First, heat the pan at low flame and add 1/2 tbsp of ghee.
- Now roast the cashew and raisin in the pan on low flame.
- Once the cashew turns into golden brown, take it and keep aside on a plate.
- Again add 1 tbsp of ghee in the pan.
- Now roast ½ cup of rava. Note, use good quality rava.
- Roast the rava for 5 mins at low flame till it turns aromatic.
- Keep it aside.
- Now pour 2 cups of water in the pan and boil it.
- Furthermore, add kesari color (food color) and let it boil for few seconds.
- Now add a pinch of salt in it.
- Note: salt is used to only enhance and show the sweetness.
- Now add ¼ tsp of cardamom powder to it.
- Once the water is completely boiled, keeping in the low flame add ½ cup of roasted rava slowly.
- Note: while you are adding the rava stir continuously till the it absorbs all the water.
- And make sure no lumps are formed while stirring.
- After rava absorbs all the water content, now add sugar in it and stir well.
- On top of it add ¼ cup of ghee and mix it well.
- and again mix well until kesari separates from the pan.
- Now finally add roasted cashews and raisin and turn off the flame.
- Now the dessert “Rava Kesari” is ready to serve.
